Congee is a healing dish that is easy to digest. It’s made from white rice that is cooked so long it’s nearly fully disintegrated. It’s eaten when recovering from illness, and is also a good option when looking to reset your digestive system. Congee is a savory porridge, but it could be eaten for any meal. After all, there’s no rule that breakfast has to be sweet!

Vegan Congee

  • 2 teaspoons sesame oil
  • 2 inches ginger, peeled and finely chopped
  • 1 cup white basmati rice, rinsed
  • 8 cups vegetable broth

Prep time: 05 min. | Cook time: h 30m | Total time: h 35m

  1. Heat sesame oil in a medium-sized pot.
  2. Add the chopped ginger and sauté for 1-2 minutes.
  3. Add the rice and broth and bring to a boil. Reduce to a simmer and cover, allowing to cook for up to 90 minutes or until the water is fully absorbed and the rice becomes porridge-like in texture.
  4. Serve plain or with your choice of toppings. Try options like cilantro, green onion, chopped peanuts, soy sauce, sesame oil, miso, sesame seeds, or dulse flakes.
I think I've been a porridge lover from day one. I've only had one hospital stay. I was too young to remember, and quite frankly, though I think it was dehydration after some GI distress, I can't fully remember exactly the reason I was there. My parents told me that I was accidentally served hot cereal as a meal when I supposed to have something else. And while I wasn't interested in touching the other food they gave me, I gobbled the hot cereal right up!
